This 'Gyuto' style kitchen knife features a 9-1/4" long cutting edge, 2-1/8" max width blade of san mai construction. The core steel is 240 layer CruForgeV/15n20 damascus, and the jacket is 416 alloy stainless steel. The handle is made from amboyna burl, with a scalloped bolster of twill carbon fiber, separated by a recessed spacer of reclaimed Zildjian cymbal bronze. Handle construction uses a threaded through-tang and the stainless steel nut is visible on the handle end. The blade grind is a thin, very mild convex/flat hybrid, at about a 0.120" maximum spine thickness and featuring a mild distal taper.
