This 'Gyuto' style kitchen knife features a 9" long cutting edge, 2-1/8" max width blade of san mai construction. The core steel is 240 layer CruForgeV/15n20 damascus, and the jacket is 416 alloy stainless steel. The handle is made with an integral frame/bolster in black G10, with scales of vintage emerald paper Micarta, shaped in an octagonal "wa" style, with decorative kumiko pattern surface engraving and a hand rubbed 1000 grit finish. The blade grind is a thin, very mild convex/flat hybrid, at about a 0.110" maximum spine thickness and featuring a mild distal taper.
