This santoku style kitchen knife features a 203 mm long, 30 mm max width blade of san mai construction. The core steel is CruForgeV high carbon vanadium alloy, and the jacket is recycled Montana bridge wrought iron.
The handle is made from African blackwood in a classic octagonal "wa" style, with a bolster of Australian "snap and rattle" burl and a hand rubbed 1000 grit/Tru Oil finish.
The blade grind is a very mild convex/flat hybrid, at about a 0.120" maximum spine thickness and a mild distal taper.
