This santoku style kitchen knife features a 203 mm long, 30 mm max width blade of san mai construction. The core steel is CruForgeV high carbon vanadium alloy, and the jacket is recycled Montana bridge wrought iron.
The handle is made from Australian "snap and rattle" burl in a classic octagonal "wa" style, with a bolster in African blackwood and a hand rubbed 1000 grit/Tru Oil finish.
The blade grind is a very mild convex/flat hybrid, at about a 0.120" maximum spine thickness and a mild distal taper.
