This santoku style kitchen knife features a 170 mm long, 51 mm max width blade of san mai construction. The core steel is 240 layer CruForgeV/15n20 damascus, and the jacket is 416 alloy stainless steel. The handle is made from desert ironwood in a classic octagonal "wa" style, with a bolster of dyed stabilized box elder burl and a hand rubbed 1000 grit/Tru Oil finish. The blade grind is a very mild convex/flat hybrid, at about a 0.120" maximum spine thickness and a mild distal taper.
