This is a large tourné style knife with a western-style handle profile. It is used much the same as a typical paring knife, but the recurved blade makes it handier for paring rounded vegetables, as well as tasks like eyeing potatoes. It is also a handy shape for trimming fruit.
This example features a blade of firestorm pattern damascus in CruForgeV and 15n20 steels for an edgeholding upgrade above standard 1080 blend. The bolster is vintage butterscotch paper micarta, the spacer is repurposed Zildjian cymbal bronze, and the handle is made of high quality modern blue canvas phenolic laminate with hidden stainless retention pins.
